Veining carries through a join where both pieces come off the same slab, which is decided at nesting. A mitred join at a corner is a different job from a butt join along a run, and they are not priced the same. Slabs come in finite sizes, so a long run needs a join whatever the room looks like. The short run at the head of a U usually sits under a window, so that piece is scribed on three sides at once and has nowhere left to be pushed back to. Where the counter runs flush with the working surface instead of standing above it the whole thing becomes one plane, which looks better and doubles the unsupported span. The bar is set out from the seat and worked back to the units.

Is a drainer groove worth it in a small Blackwall kitchen?

A groove set needs a clear stretch of worktop beside the bowl, so it competes with the run for length instead of being free surface. They read strongly across a dark stone and are nearly invisible on a pale one, so look before deciding. The grooves sit inside the depth of the top with stone left either side, so a shallow run limits them. The room is square, the walls are plumb and the floor is flat, so almost every complication in the job belongs to the building rather than the kitchen.
