What the kitchens here are actually like
The carry is the constraint: a single stair with tight half-landings, or deck access with a long walk from the lift. The units stay and only the surface changes, so the job is a day, and what makes it a difficult day is the building. Sound carcasses are the one condition.
Victorian terraces around the park have narrow rear additions where the kitchen stays a galley of about 2m wide, with the option of opening into the rear reception to gain a return. Rebuilt estate housing nearby has contemporary kitchens sized to modern regulations with an island only in the larger family units.
In the narrow rear additions there is not enough width to swing a 600mm top into place flat, so it comes in on edge and gets lowered between the wall and the units.
Walls are dense block or in-situ concrete with a bonded plaster, so the bottom course of tiles brings plaster with it when the old top comes off. Plaster bonded straight onto concrete comes away with the bottom course of tiles, leaving a band behind the upstand. What is under the old top is the real question.
On these streets the housing is Victorian terrace, Rebuilt estate housing and Interwar block. Each of those behaves differently once the old top comes off.

What has to be finished before you can template?
Level has to hold across the whole room rather than along one wall, or a floor that falls end to end shows as a step where two pieces meet. We would rather find it at template than on the morning, which is why the templater looks behind the units. The laminate has been covering it up. Sort a parking bay or permit near the entrance, confirm the lift is in service and get us the door codes, and tell us about any asbestos survey on the flat before we start stripping out. These kitchens tend to be compact and reasonably square, so the fixed template, fabrication and fitting lines are a larger share of the total than the stone is. If the carcasses are tired the honest answer is that stone will find that out, and it is better said before than after. Sound carcasses are the condition.
