The kitchen normally sits in the back addition or a later side return, which puts the run against the oldest and least straight wall in the building. The template records what the building actually did, not what the plan intended, and the gap between those two is what this visit is for. The room as it is, to the millimetre.

The larger houses on the park side have generous rear kitchens of 3m to 3.5m with a separate utility in the old scullery, and the smaller terraces keep a conventional galley.

Utility rooms carved out of old sculleries usually need a second smaller top, and it is worth cutting it from the same slab for a match. A lot of homes here run big weekly cooking loads, so a durable surface and a deep sink matter more than a delicate finish.

The flat entrance door and the internal doorways are usually tighter than the communal stairs, which is the opposite of what most people assume. The catch with a galley is that both runs are seen end-on from the doorway, so any difference in overhang between the two reads immediately. A layout templated off one wall instead of one datum will not sit right once all the pieces are down together. One datum for the whole room.
