We seat and seal the sink and hob on the day; water, waste, gas and electrics are for your plumber and electrician. Undermount bowls are cut and polished in the workshop and dry-fitted to the stone on the bench before anything is loaded. Where the hob lands is set out against the units and the wall behind, not off the kitchen plan. An island carries its own edge detail all the way round, so a mitred 100mm apron on four sides is four mitres cut, bonded and polished before the piece ever leaves the bench. What decides the cut list here is the seating plan rather than the room shape, and one repeated table size nests far better than six one-offs. What a counter leaves behind is worth designing for.

Upkeep is settled when the slab is chosen, since it belongs to the material rather than the fabrication. Marble is the one people underestimate. It is porous, like granite, and wants sealing. Topping a seal up is a wipe-on job with a cloth. A long piece has to come through the front door, down the hall, round the newel post and through a doorway with a step down into the addition. That measurement comes first: once the gangway is fixed the table dimension follows, and on most of these frontages that means a six hundred millimetre square for two and a seven hundred millimetre round where the room widens towards the back. Chair backs do more damage than plates ever do.

A remade piece is cut from the same slab run wherever the slab allows, because a replacement from another batch will not match across a join. A remake goes back through the same cutting and polishing, so it is a return visit rather than a patch. Floors and units are protected before anything comes through the door. Two people will walk a two-metre piece in through a front door; the same hall with a three-metre piece wants four, purely because nobody can let go halfway. The bases go in first and are stood where they belong, so nothing heavy is dragged across a floor that has already been finished. Nothing is stacked flat on a dining room floor.
