Both are templated after the worktop is down and settled, because they are cut to the wall itself. Ordered later from a different batch, the match is not reliable where the two pieces meet. The joint between splashback and worktop is siliconed, never grouted, so it can move a little without cracking. The step down from the main house into the addition is commonly a hundred to a hundred and fifty millimetres, which gives the kitchen a different floor datum from the rest of the ground floor. That entrance is what caps the counter, because a shopfront door and the step in front of it will take far less than a full-length top, so the run is broken over a support in the carcass rather than gambled on. A parade unit is entered up a step nobody thought to measure.

Granite is porous to varying degrees, so it is sealed when we fit it and topped up over the life of the worktop. Marble is the one people underestimate. It is porous, like granite, and wants sealing. A seal is not waterproofing. It only buys time to wipe a spill up. Where the addition is single storey the ceiling follows a lean-to roof, so one side of the room loses height and a full-height panel has a sloping stop. A front room converted into a surgery or a salon gives a small lobby and a counter that still has to leave width for people to get past it. Where the hall is tall, the light finds every seam in the counter.

A piece with a bowl and a hob cut into it is the fragile one, and it is handled accordingly. A boiling tap needs a hole of its own and a cupboard below for the tank, so the units change too. A Belfast or butler sink has to be installed and at its final height before the template, because the stone is cut to sit on it. A galley closed at one end takes a short return across the top, and that little piece carries the same edge work, the same handling and nearly the same cost as a full length. The return between the high counter and the low shelf never nests neatly, and it is what decides how much slab the desk swallows. The return between the two levels is drawn first and cut first.

Chips at an edge or a corner are the usual form, because that is where stone is least supported. Garden routes carry their own hazards: a drain cover, a step up to a patio, wet decking, or a lawn that will not take a loaded trolley. The lower transaction shelf is short and easily handled; it is the upper counter that has to be walked in on edge and turned at every corner.
