The island is usually the biggest single piece of the job, so book the extra pair of hands and check the extension floor is level first, because new screed over old joist lines rarely is.
Level has to hold across the whole room rather than along one wall, or a floor that falls end to end shows as a step where two pieces meet. The template plots it as it is, at the exact height the worktop will sit, and the drawing carries that through. That is why the visit takes two or three hours.

Units fixed and packed level over the sloping floor, walls replastered and dry at their final thickness (tiling and splashbacks go on after the worktop, never before), and the sink, tap and hob physically on site, with a Belfast sink built in and set at its finished height. Where someone is living in the house through the work, the strip-out and the fit are planned so the kitchen is out of use for a day and not a week. The templater needs the sink, tap and hob on site, and a Belfast sink installed at its final height. No stone is cut from a plan.
