What is not included in the quoted figure?
Taking the old tops away is a line rather than an assumption, so it comes off if you do not want it. Two kitchens the same length can be far apart, because material, edge and cut-outs move independently of size. The quote is written from the template drawing. Before that it works from what you have described. Floors settle, and once base units are packed and levelled properly the stone sits true while everything else in the room admits it is not. Where the floor falls away across a lobby the carcass is packed level first, because the top cannot correct anything sitting under it. The public face is the face that has to be right.
