Kitchens are consequently all different sizes and shapes, often with a wide side extension giving an unusually broad, shallow room best suited to two facing runs. Quiet roads, deep plots and plenty of off-street space, with the main constraint being that many properties sit well back from the road behind a long front drive.
Wide doorways and level thresholds mean full-length pieces go in whole and the join count comes down to slab length alone. The ragged band left when old tiles and laminate come off together is what usually decides upstand over full height. The wall makes that decision, not the brochure.

A 100mm upstand is the low-maintenance answer, and full-height stone is the one that has to be committed to early. Same slab run as the tops.
