Nothing in a house of this age is square, and the kitchen is usually the part that has been altered most often. Socket positions, sill heights and wall flatness are the three things that settle this, and all three are properties of the building. Siliconed to the top, never grouted.

Smaller artisan Victorian terraces where the original kitchen is a cramped closet wing - the standard upgrade is a modest rear extension giving a straight 3m run plus a 1.2m return, with a peninsula instead of an island because the room is not wide enough for both.

These were built with a scullery that has since been swallowed by an extension, leaving a change of floor level roughly where the run crosses. A 100mm upstand bedded on silicone is the honest answer where the plaster bows, because it rides what a tall panel exposes. The wall makes that decision, not the brochure.
