What the kitchens here are actually like
A hundred and forty years of alterations sit under the current kitchen, and the worktop is what has to sit flat on top of all of it. No stone is ever cut from a plan, which is why the visit happens after the units are in and not before. Sink, tap and hob on site, not on order.
Smaller artisan Victorian terraces where the original kitchen is a cramped closet wing - the standard upgrade is a modest rear extension giving a straight 3m run plus a 1.2m return, with a peninsula instead of an island because the room is not wide enough for both.
The rear room is generous with a chimney breast in one corner, so the run gains a return and two scribed ends whatever the plan drew. Alcoves either side of the breast are rarely the same width and rarely parallel, so each one is templated as its own piece with its own scribe. Recorded as it is, not as it was drawn.
The mix here is Victorian two-up two-down, Victorian terrace, 1950s council rebuild and interwar semi. A quote that ignores which one you have is guessing.

If the island is a few hundred millimetres longer than the usable length of a slab, a second slab gets bought to gain that overhang, and the whole slab is paid for rather than the part used. The template records every angle in that shape as it actually is rather than as the plan drew it. The drawing leaves site complete.

What has to be finished before you can template?
A junction between an original floor and a later extension slab is almost never at the same level, so units carrying a run across it need packing first. The template plots it as it is, at the exact height the worktop will sit, and the drawing carries that through. Measured at worktop height, nowhere else. Units fixed and packed level over the sloping floor, walls replastered and dry at their final thickness (tiling and splashbacks go on after the worktop, never before), and the sink, tap and hob physically on site, with a Belfast sink built in and set at its finished height. These kitchens tend to be compact and reasonably square, so the fixed template, fabrication and fitting lines are a larger share of the total than the stone is. The templater needs the sink, tap and hob on site, and a Belfast sink installed at its final height. Fitted, fixed and level, then we come.
