The two demand completely different specifications on the same day. The High Street and the lanes around it are narrow, sloping and heavily restricted with limited loading windows, so village jobs need an early slot; the surrounding suburban roads have proper driveways and no such problem.
Lime plaster over rubble moves in and out enough that a single long panel will show a gap somewhere along its length. These are the multi-piece jobs: long runs, a large island and often a range cooker that cannot be moved, so the stone is templated in several pieces and how the vein runs across the joins matters. Units kept, surface changed, one day.

Where someone is living in the house through the work, the strip-out and the fit are planned so the kitchen is out of use for a day and not a week. A replacement keeps the units and changes the surface, which is the least disruptive way to do this in an occupied property. Units kept, surface changed.
