The sink, tap and hob have to be physically in the room at the template, not merely ordered, because the cut-out is machined to the item itself. If the sink or hob changes after the template, the drawing changes first and nothing is cut meanwhile. A breakfast bar on the outer side is an overhang like any other, and the support under it is sized for people leaning on the end rather than for the weight of the stone alone. The seating side is the part that decides the piece, because a stool at the open end puts a load on a corner that a wall would otherwise have been carrying. Nothing sits over a join that somebody leans on.

What happens if my units are not level?

Packing takes up small variation. It is not there to hide something that belongs in the units. Units have to be fitted, fixed and level before templating, and it is better to hear that at the template than on the fitting day. If the carcasses are corrected, the template is taken again, since a drawing off units that then moved is worthless. Plaster thickness varies over the height of a wall, so the line at worktop height is not the line at skirting level, and the units decide which one matters. Anything that puts a notch in a bar takes material out of the piece at the point people lean on it, so the notch and the support are drawn together or not at all. A bar top is set to one datum along its own length.
