What the kitchens here are actually like
A hundred and forty years of alterations sit under the current kitchen, and the worktop is what has to sit flat on top of all of it. Socket positions, sill heights and wall flatness are the three things that settle this, and all three are properties of the building. Same slab run, same day, same batch.
The upper flats put the kitchen in a rear addition with a low mono-pitch ceiling, which limits wall-cupboard height and pushes the design toward a longer run and stone upstands.
A lot of these houses were long ago split into a ground-floor flat with the garden and a first-floor flat with the loft, so you get two small kitchens per address, each around 2.4-3m with a peninsula.
Floors are suspended timber over a shallow void and have moved, so the units are packed and levelled before anything is set on them. A 100mm upstand bedded on silicone is the honest answer where the plaster bows, because it rides what a tall panel exposes. The wall makes that decision, not the brochure.
What we are usually templating in is flat-fronted Victorian terrace, two-storey terrace split into upper and lower flats, flat over shop on Munster Road and small modern infill. Each of those behaves differently once the old top comes off.

What do I need to sort out first?
Where a corner is a couple of degrees off, a mitre cut to a theoretical ninety degrees opens on the wall side and there is no closing it afterwards. The chimney breast recess must be replastered and fully dry, and the hob and extractor positions fixed, before anyone templates a full-height piece into it. Where ownership is split across a building, the common parts belong to someone else and the carry route is negotiated rather than assumed. A 100mm upstand is the low-maintenance answer, and full-height stone is the one that has to be committed to early. The wall has to be ready.
