Solid brick with a sand and cement render is firm to work against and reliably out of plumb across the length of a run. All of that is settled at the nesting stage, because a machined piece cannot be adjusted afterwards. The drawing decides it before the saw does.

Long Edwardian and interwar terraced streets with smaller rooms than neighbouring Kew - kitchens run 2.4m to 3m with a return under the window, and where an extension has been done it is usually a simple 2.5m rear infill rather than a full side return. The peninsula end detail needs deciding up front - square edge, mitred apron down the end, or a full waterfall - because a waterfall end has to be cut in sequence off the same part of the slab as the top. Where someone is living in the house through the work, the strip-out and the fit are planned so the kitchen is out of use for a day and not a week. Changing an appliance after the nest is set means recutting the piece, not adjusting it. The approved drawing is the instruction.
