Two working surfaces at two heights, a return between them and clear knee space under the lower one: that is the shape almost every counter ends up being, whatever the front elevation promised. Serving height comes off the standard, not off the sketch.

Doorways, the newel post and the handrail usually take the room away, rather than the stairs themselves. A join forced by the route still sits over a gable, so it is no poorer a join for that. A piece travels on edge, never flat, because on edge is how stone of that length carries its own weight. The barrier, the entry code and the estate rules decide when a van can get near the door, and none of that is negotiable on the day. A lobby is one of the few places a piece can be staged, so the counter comes in early and stands on trestles until the carcass is ready for it. Two heights means two carries, and the low one is not the difficult one.
