A hundred and forty years of alterations sit under the current kitchen, and the worktop is what has to sit flat on top of all of it. Almost everything that makes a fitting day hard is a property of the building rather than of the stone. One visit, our own installers.

A lot of large period semis where the kitchen has been pushed out into a rear or side-return extension with bifolds, giving one long uninterrupted run and a small island or peninsula rather than a full one.

Ceramic Belfast sinks with undermount cut-outs come up regularly on the period side. The roads are hilly and narrow with parking on both sides, and several streets drop steeply from the road to the front door, so the carry is often downhill on wet steps rather than a flat approach. Where a slab has to be walked down a set of steep front steps we bring extra hands rather than trolley it, because a drop on a stone tread here is a broken piece every time.

The back addition is a narrow two-storey outrigger with a single external wall, and the kitchen galley runs the length of it. We measure the front door, the hall width and the turn into the kitchen before anything comes off the van, because a 3m piece has to swing through that corner on edge and stone does not bend to help you. That is the shape of the day.

The buildings themselves are mostly Victorian villa, Edwardian semi, 1930s detached and 1960s low-rise flats. They are not interchangeable, and a worktop finds the differences quickly.

On a heavily veined stone the island and the run behind it are nested off the same area of slab so the movement relates across the room. On the day that means dry-laying the whole layout first and only then pulling and bonding the joins. Dry-lay first, always. Material is £110-£550 per square metre supply only, and templating, fabrication and fitting are quoted on their own lines.

What has to be finished before you can template?

Window boards and cills stand proud of the plaster, so the back edge of the top has to be plotted to where the units actually sit rather than to the wall. On the day it means dry-laying, marking, and cutting the scribe on site before anything is bonded. Dry-lay, mark, cut, then bond. Clear the full hall and stairs route of furniture, bikes, coats and stair-gates, and keep the front door propped and unobstructed for the carry. A street with houses in single occupation next to the same houses cut into flats produces two completely different jobs from the same elevation. Floors and units are protected before anything comes through the door, communal or otherwise. Access for the whole slot, or a different day.
