A hundred and forty years of alterations sit under the current kitchen, and the worktop is what has to sit flat on top of all of it. No stone is ever cut from a plan, which is why the visit happens after the units are in and not before. Sink, tap and hob on site, not on order.

Most of the work is retrofit into side-return or full-width rear extensions, so the kitchen is a long single-wall galley of 4m to 5m facing an island of 2.8m to 3.4m. Above the shops and in the period conversions you get the opposite problem: a 2.2m galley with the boiler still on the wall.

Units fixed and packed level over the sloping floor, walls replastered and dry at their final thickness (tiling and splashbacks go on after the worktop, never before), and the sink, tap and hob physically on site, with a Belfast sink built in and set at its finished height. Mixed ownership means the decision-maker is not always the person who lets us in, so it is worth being clear early about who signs the quote off. The template happens when the units are in, fixed and level, whoever is fitting them. Fitted, fixed and level, then we come.
