The commercial frontage on streets like these is a narrow shop with the dining room running back from the pavement, so the tops go in past furniture that is already down. Chair backs do more damage than plates ever do.

Taking the old tops off and disposing of them is its own line on the quote rather than something folded into the stone price. The tap and waste have to be disconnected by a plumber before we start and reconnected once the stone is in. Take the old tops off yourself if you would rather, and the quote simply carries one line fewer. A resident bay and a shared-use bay can sit on the same street under different rules, and it is usually the shared one a visitor permit or a ticket touches. Deliveries are timed to the room rather than to the day, so the unload lands between service or before the doors open. A whole order comes off in one movement wherever it can.
