Original walls are thick, lime-plastered and rarely straight, which makes dry-laying and scribing the bulk of the fitting day. Getting in is straightforward, so the day is spent dry-laying and scribing to walls that have never been straight. That is the shape of the day.
What we are usually templating in is Large Victorian villa, Edwardian villa, 1970s conversion flat and purpose-built student housing. Each of those behaves differently once the old top comes off.
