Bay bookings are usually an hour or two, which is fine for unloading and no use at all as a place to leave the van for a day. Each cut-out is priced on its own line, so a range, a bowl and a half, a boiling tap and a drainer are four items rather than one. Nothing is cut out in the kitchen. Cutting a bowl on site is how worktops get cracked. The joint where a peninsula meets the main run wants a gable directly under it, and where the units do not offer one, steel goes in to carry that joint instead. The return between the high counter and the low shelf never nests neatly, and it is what decides how much slab the desk swallows. The front edge is the one everybody touches, so it is drawn first.

An upstand is a slim strip that follows the worktop up the wall; a full-height splashback runs from the worktop to the underside of the wall units. Upstand or splashback, the stone is cut from the same slab run as the worktop, at the same time, so the batch actually matches. What decides between them is usually the wall: what it is built of, how flat it is, and where the sockets ended up. Winders at the head of each flight are the tightest part of the climb and they are appreciably tighter than the straight run below them. That entrance is what caps the counter, because a shopfront door and the step in front of it will take far less than a full-length top, so the run is broken over a support in the carcass rather than gambled on. Goods lifts in old warehouses take longer pieces than most buildings.
