Machining is permanent. If a later kitchen moves the sink, the grooves stay where they were cut. Grooves are machined into the surface rather than applied to it, so there is nothing to come loose later. A groove set needs a clear stretch of worktop beside the bowl, so it competes with the run for length instead of being free surface. Old flues run inside the wall behind the run, so a deep fixing finds a void about as often as it finds brick. None of that stops a bar being fitted level, but it does mean the top is set to a datum of its own and packed off the frame rather than followed down to the floor. The overhang decides the bar, and the bar decides the stone.

What moves the figure after templating is a change you make: a different edge, an extra cut-out, a bigger sink chosen late. Nothing is payable until the template, and the template measures the room as it stands rather than estimating from a plan. The quote is written from the template drawing. A wall line that runs level over a floor that does not means the finish closes up on the plinth at one end, which is joinery rather than something the stone can answer. Where the nose has to be carried past something fixed the support moves rather than the stone, since a corbel landing in the knee space is worse than no corbel at all.
