We plan the reception counters in Gallions Reach around access, ceiling height and what the kitchen has already been through, none of which shows up in a phone call. New-build houses here have a kitchen-diner across the rear with a 3m run plus a 1.5m island, generally already square and level, which makes the templating straightforward. How much upkeep is a stone worktop?

Granite is porous to varying degrees, so it is sealed when we fit it and topped up over the life of the worktop. Quartz carries resin, so a hot pan wants a trivet, while granite and sintered stone will take one without complaint. Marble is the one people underestimate. It is porous, like granite, and wants sealing. Timber-frame construction with plasterboard linings means every fixing has to find a stud, and a peninsula end needs proper support built in beforehand. A neighbourhood of new blocks means concierge desks: a managed lobby with a counter working as a post point and a security position at the same time. A converted house wants a counter that reads as furniture.

Is a full-height splashback practical in a Gallions Reach kitchen?

Tiling and stone can meet, but where they meet is decided before the template rather than after. An upstand covers the gap where the worktop meets a wall that is not flat, which is its real job. Both are templated after the worktop is down and settled, because they are cut to the wall itself. These houses are three storeys on a small footprint, so the kitchen is on the ground floor and everything else is stacked above it. Ground-floor units in these developments arrive as shells and get fitted out as clinics and surgeries, where the transaction shelf carries a card reader and a screen. Old shopfronts were never sized for a three-metre top.

How do you cut out for an undermounted sink?

A piece with a bowl and a hob cut into it is the fragile one, and it is handled accordingly. A sit-on sink and an undermounted one are different cut-outs, so which it is gets settled before the template. If the sink or hob changes after the template, the drawing changes first and nothing is cut meanwhile. Older houses put the boiler or the meter on one of the two walls, and whatever is boxed in around it sets the point where that run has to stop. An external corner on a counter is seen from both sides at once, so it is mitred rather than butted and the pattern is carried round it. External corners on a counter are mitred, never butted.
