Walls that bow along their length are the normal condition rather than the exception, and a straight-cut back edge will show a shadow gap at one end and touch at the other. Is templating a separate visit from fitting?

The template produces a drawing, and the workshop cuts to that drawing once you agree it. The same firm templates and fits. Nobody else is brought in to install. Templating and fitting are two visits, not one, and the gap between them is when the stone is actually cut. A hundred and forty years of alterations sit under the current kitchen, and the worktop is what has to sit flat on top of all of it. Two working surfaces at two heights, a return between them and clear knee space under the lower one: that is the shape almost every counter ends up being, whatever the front elevation promised. The counter is drawn to the carcass, and the carcass is measured first.

Upstands or a full-height splashback?

What decides between them is usually the wall: what it is built of, how flat it is, and where the sockets ended up. An upstand covers the gap where the worktop meets a wall that is not flat, which is its real job. Socket and switch positions have to be final before templating, because the openings are machined rather than chopped out on the wall. The addition is a brick narrower than the house it hangs off, which leaves a stub of the original rear wall standing square to the run at the doorway end. That entrance is what caps the counter, because a shopfront door and the step in front of it will take far less than a full-length top, so the run is broken over a support in the carcass rather than gambled on. Nurseries want a hatch, and the hatch is on the same drawing.
