A hundred and forty years of alterations sit under the current kitchen, and the worktop is what has to sit flat on top of all of it. The fitting day is planned backwards from all of it, before the first piece comes off the van. One visit, our own installers.

Long streets of bay-fronted terraces where the kitchen sits in a two-storey back addition, giving a narrow L with the sink under the rear window and the hob on the party wall. Side-return infills are increasingly common and turn that L into a 4m run plus a small island.

The party wall in these back additions is rarely straight along its full length, so a long side-return run gets scribed in sections rather than templated as one flat edge.

The addition wall is half a brick thick in places and has usually had a damp course injected and been re-plastered, which leaves it neither flat nor consistent. The day is planned backwards from the hall, and the scribing takes longer than the carry. That is the shape of the day.

What we are usually templating in is Victorian bay-fronted terrace, Edwardian terrace, inter-war semi and flat conversion. Each of those behaves differently once the old top comes off.

Where a run finishes into a reveal, the depth of that reveal is taken at worktop height and nowhere else. Rushing that is what leaves a gap you look at every morning for fifteen years. It is the slow part of the day and it should be.

The hallway turn and the door width, which cap the longest single piece we can physically get to the kitchen regardless of what the run measures.
