A full-height piece shows a wall that is out more than an upstand does, over the extra height. An upstand covers the gap where the worktop meets a wall that is not flat, which is its real job. Stone up a wall is heavier than tile and bonded rather than hung, so the wall has to be sound. Winders at the head of each flight are the tightest part of the climb and they are appreciably tighter than the straight run below them. Original walls give nothing straight to work to, which is why a bar here is built as its own frame and scribed at the back rather than trusted to the plaster behind it. The frame is built to the room and the stone answers to the frame.
