Two kitchens a street apart in Whitechapel can turn reception counter work into two quite different pieces of work, which is why nothing is priced from the doorstep. Estate and terrace kitchens are compact and usually closed off, running 2m to 2.6m along one wall, and many are set up for a large household with a full-size cooker and a second fridge in the run. New towers along the main road have developer-fitted open-plan kitchens with an island, often replaced within a few years. The survey answers it, the drawing records it, and you sign off the drawing before a single sheet is cut.

Where the kitchen has been opened into the living room the opening was trimmed with a steel, and a stub of the old wall was left standing at one end. A reception counter answers to the building it stands in more than to the drawing, because it is fabricated to a carcass somebody else has already built and fixed. Front of house is read from standing height and from seated height both.

The kitchen is a narrow room off the hall with the window at the far end, so the run is a galley by construction rather than by choice. These are the counters where the lower transaction shelf earns its keep, because the people served at it are the people the standard was written for, so the knee space and the clear approach to it are checked on site rather than taken off a drawing. The service road at the back is often the real way in.

Locally the mix runs to Victorian terrace, 1930s and post-war estate block and 2015 onwards high-rise apartment. The age of the shell tells us more than the age of the kitchen does.

Why Whitechapel is its own job

A worktop that fits in Whitechapel is the result of what was noticed at the survey, not of what was hoped for afterwards. The main road is a red route with a street market along it for most of the week, so unloading is via side turnings and a longer carry. New residential towers require a booked loading bay slot, a lift protection booking with concierge, and often a delivery window outside peak hours. It is two different trades on one postcode: hand-carried small pieces into old estate kitchens, and booked service lifts and island slabs in the new towers. The counter is the piece of stone in a building that gets touched most and looked at longest, which is why the front edge and the seams carry the specification. The lower transaction shelf is set at the height a seated person can use, and the knee space beneath it is kept clear of legs and gables. Is Whitechapel on your patch?

Yes. Whitechapel is on the patch, and the postcodes we work here are E1. It is worked on our east London run, along with the rest of Tower Hamlets. What is different about reception counters in Whitechapel?

Panel joints run vertically down the walls at regular centres and each one is a slight step rather than a smooth curve. Estates of this kind carry the buildings that serve them, and every one has a counter the public queues at: a housing office, a health centre, a community hall, a library. A pharmacy counter is two heights before anybody draws it. Boxing is rarely the same depth at worktop height as it is at floor level, so measuring it low down is the usual reason a top will not sit back. Not especially, and pretending otherwise would be simple enough. What the research on this patch actually lists is worktop installation, worktop replacement and worktop splashbacks & upstands. It is a fact about the local housing rather than about the work. The job is quoted, cut and fitted the same way wherever on the patch it lands. Replacing one plot years after handover is the problem nobody plans for, because a quartz colour can be reordered and a granite block cannot. Counters are nearly always one-offs, so the saving that comes from repeating a specification is not usually on the table here. Card reader positions come from the operator, not the architect. New-build kitchens are usually smaller than the plan suggests once the appliances are in, so the usable run is shorter than the drawn run. Where an operator is fitting out several receptions, the counters come off one slab run so the desks read as a set rather than as neighbours. Two desks on one site still take two templates.

What makes one Whitechapel kitchen dearer than the next?

A pop-up socket in the surface is one more cut-out through the full thickness, and it wants the same clear space beneath it that a sink does. A counter has the same argument in miniature: a straight run nests kindly on a slab, and every return costs yield. A shallow shelf still needs a support run of its own. What holds a template up more often than anything else?

Anything that has to stay accessible, a stopcock, a gas meter, a riser panel, is marked on the template so the stone is cut around it instead of over it. What a counter is scribed to is the joiner's carcass rather than the plaster, which is why it is templated after the carcass is fixed and never before. Nothing on a counter is corrected with sealant. Tell us the hours the building can be worked in and whether the lobby stays open, and send photographs of every corner so we can find the ducts before we draw. Flats bought out of managed stock keep the original kitchen dimensions long after the ownership changed, so the layout says very little about who is paying for the work. Where a managing agent has to approve the work, the drawing goes out in a form they can sign without ever standing in the lobby. A short lease buys a different counter from a long one.

How many visits does a Whitechapel worktop take?

Templating and fitting are two visits, not one, and the gap between them is when the stone is actually cut. The template produces a drawing, and the workshop cuts to that drawing once you agree it. On the fitting day floors and door frames are protected, joins clamped flush, sink and hob sealed. Floors are a sand and cement screed over concrete, laid fast and worn since, so they are hard, solid and seldom flat. Two working surfaces at two heights, a return between them and clear knee space under the lower one: that is the shape almost every counter ends up being, whatever the front elevation promised. The desk is furniture, so all four edges get the same finish.

Do you take the old worktop away?

Disposal means it goes in the van, not into the garden to wait for a collection. Take the old tops off yourself if you would rather, and the quote simply carries one line fewer. The tap and waste have to be disconnected by a plumber before we start and reconnected once the stone is in. Underground loading has a height restriction, and a van with an A-frame on it is taller than the driver remembers. A reception fit is often booked outside opening hours precisely because that is when the kerb in front of the building is free. Nothing is stood anywhere on a pavement it could be knocked from.

What happens if a worktop is damaged getting into a Whitechapel property?

Every piece is dry-assembled on the bench before it is loaded, so a fabrication mistake is found in the workshop rather than in your kitchen. Most breakages happen on the carry, which is why the route is walked and measured before anything comes off the van. A remake goes back through the same cutting and polishing, so it is a return visit rather than a patch. Where only one car serves the building a breakdown on the morning halts the job outright, so the fallback route is worked out at template rather than on the landing.
