What the kitchens here are actually like
The carry is the constraint: a single stair with tight half-landings, or deck access with a long walk from the lift. Taking the old tops off is also the first honest look at what has been going on underneath them. Sound carcasses are the one condition.
The interwar cottage estate houses were built with a small dedicated kitchen at the rear, roughly 2.4m by 2m, with a larder and a back door onto the garden, and many still have that footprint. Where a rear extension has been added the kitchen becomes an L of about 3m by 2m, but the original external wall usually stays as a nib, which forces a joint or a mitre at the corner.
The retained nib of the old back wall is where these kitchens want a mitre, and getting that internal corner tight is what the job is judged on.
An ex-council house is solidly built to a standard plan, with the kitchen at the rear and a back door next to it. Plaster bonded straight onto concrete comes away with the bottom course of tiles, leaving a band behind the upstand. Units kept, surface changed, one day.
On these streets the housing is 1920s cottage estate house, interwar municipal terrace, postwar infill flats and housing association maisonette. Each of those behaves differently once the old top comes off.

The kitchen is a small square room off a narrow entrance lobby, and the turn out of that lobby is the real limit on piece length. Plaster bonded straight onto concrete comes away with the bottom course of tiles, leaving a band behind the upstand. What is under the old top is the real question.
Legs bottoming out on hard concrete or an uneven screed mean the tops of the carcasses are not one plane, and that is picked up at template rather than on fitting day. This is the commonest reason a replacement turns out to need more than a straight swap. It is the usual surprise, and it is a known one.
