Two kitchens a street apart in Stratford can turn reception counter work into two quite different pieces of work, which is why nothing is priced from the doorstep. New apartment kitchens dominate and are open-plan against a wall of the living space, 2.6m to 3.2m of run with integrated appliances and a slim breakfast bar; owners replace the developer laminate top for stone within a few years. The older terraces to the west still have back-addition galley kitchens of around 2.4m. Once the template is taken the figure stops moving. Everything before that is an estimate and is described as one.

A hundred and forty years of alterations sit under the current kitchen, and the worktop is what has to sit flat on top of all of it. A reception counter answers to the building it stands in more than to the drawing, because it is fabricated to a carcass somebody else has already built and fixed. The lower shelf is there to be used, not to break up an elevation.

The flat entrance door is a certified fire door on a closer, and taking it off for an hour means dealing with the seals and the closer before the day ends. These parades have a step up off the pavement and a door that was never sized for a counter top, so the shopfront caps the piece length. Public counters are specified for wear at the front edge.

Why Stratford is its own job

Around the centre almost everything is a managed development with basement loading bays, booked goods lifts and marshalled service yards, and events at the nearby venues bring road closures and event-day parking restrictions. You are left with a desk whose join sits over a support and out of the line people look along, instead of landing wherever the slab happened to run out.

Counter work starts where the joinery finishes: a carcass built by another trade, and a stone top made to what that carcass actually turned out to be. The whole counter is dry-assembled on the bench, apertures and all, before anything is wrapped for the van. A narrow deep unit puts the counter along one side, and the knee recess has to leave a clear route past it for everybody else. The join sits over a support and out of the sightline.

The money

What it costs in Stratford

Machining is where the money sits: apertures for cable and card readers, a radiused internal corner at every opening, and a mitred return between the two levels. Two facing runs mean two sets of edges and two scribes in a small span, which is why a compact galley rarely prices as cheaply as its area suggests. The rate is £110 to £550 per square metre supply only, though what you buy is slabs rather than square metres, which is why the material line follows the yield and not the tape. Do your own fitters come out to Stratford?

Yes. Stratford is on the patch, and the postcodes we work here are E15. It is worked on our east London run, along with the rest of Newham. A market day closes the street to traffic for the morning and hands it back in the afternoon, which moves the visit rather than cancelling it. A commercial frontage rarely has anywhere to stop, so the unload is timed rather than assumed and the counter pieces come off first. A frontage with no stopping is a fitting slot, not a fitting day. Does the housing in Stratford change how reception counters works?

Boxed sash frames swallow a hundred millimetres of wall on each side of the opening, so the wall between a window and a corner is shorter than a plan makes it look. The commercial work around housing of this age is shopfront: a narrow unit off a high-street parade, entered up a step, with the reception running back from the door into the depth of the plan. A converted front room gives a lobby with no depth to it. A room can be out of square in both directions at once, so the wall that leans is also the wall that runs downhill, and one scribe cannot answer both. A counter is worse off than a kitchen here, because it usually stands clear of the wall and has nothing behind it to hide a gap. A shelf over a knee recess cannot be packed, so it is cut true.

How does the stone actually reach a kitchen in Stratford?

Housings and integrated appliances are set out for a 38mm laminate top, so dropping to 20mm or 30mm stone changes the clearances and needs checking before anything is cut. Where an operator is fitting out several receptions, the counters come off one slab run so the desks read as a set rather than as neighbours. The joiner has to finish before we are able to start.

What am I actually paying for, line by line?

Galley runs are usually short enough to come out of a single slab, so the material band you choose does more to the total than the room shape does. A counter has the same argument in miniature: a straight run nests kindly on a slab, and every return costs yield. A shallow shelf still needs a support run of its own. Is there anything I have to finish before the template in Stratford?

Cutting a bowl on site is how worktops get cracked. A boiling tap needs a hole of its own and a cupboard below for the tank, so the units change too. The walkway between the two runs is fixed by the units either side, so any overhang added to one worktop comes straight off the space somebody has to stand in. An external corner on a counter is seen from both sides at once, so it is mitred rather than butted and the pattern is carried round it. The public side and the staff side take different details.

Do you quote Stratford jobs by the square metre?

Two kitchens the same length can be far apart, because material, edge and cut-outs move independently of size. What moves the figure after templating is a change you make: a different edge, an extra cut-out, a bigger sink chosen late. Two walls each a degree out give an internal corner two degrees out, and the whole of that error lands in the mitre. A lobby wall that leans shows itself along the back return, so that edge is cut to the line the wall actually takes. Column casings take machined returns, not filler.

Can you get a full-length top into an upstairs kitchen in Stratford?

An external stair, a side return or a rear garden counts as carry and is measured the same way. What decides it is not the width of the stairwell but the length of piece that can be turned in it. Splitting a run costs a join, and that is the price of getting stone into the room at all. Handrails, mirrors and a sloping ceiling panel all eat into the usable diagonal, and none of them appear on a lift specification sheet. The lower transaction shelf is short and easily handled; it is the upper counter that has to be walked in on edge and turned at every corner. A long top on edge sweeps wider than the crew carrying it.
