A single red line has hours and a double red line does not, and the difference decides whether an early start is a plan or a penalty. The fitting slot is set around it, which is why we ask about it when the date is booked and not before we leave the yard. A drive and a red route make two different fitting days. The flat entrance door and the internal doorways are usually tighter than the communal stairs, which is the opposite of what most people assume. The day is planned backwards from the hall. Legs bottoming out on hard concrete or an uneven screed mean the tops of the carcasses are not one plane, and that is picked up at template rather than on fitting day. On the day it means dry-laying, marking, and cutting the scribe on site before anything is bonded. A bonded mitre goes down on one plane or not at all.

Carrying down a flight is not the easier direction, because the weight runs ahead of the crew and whoever is at the bottom has no way of stopping a slip. The fitting day is planned backwards from that point, before anything comes off the van. A piece is stood on end only where there is room to turn it. Where a marked loading box sits on the red route the stop is legal but timed, so the unload runs as one movement with every hand on it. A van that has to move mid-fit costs the best part of an hour and takes a man off the tools to do it. The first hand off the van is the one holding the clock.

One of the three we are asked for most, although worktop replacement is asked for more. Same template visit, same workshop, same installers either way. Conversions put kitchens where the services could be made to reach rather than where they belong, so runs are short and interrupted. Where the window is fixed there is no second day to fall back on, so the prep list matters more than usual. Plot after plot, the same fitting sequence. Rushing that is what leaves a gap you look at every morning for fifteen years. The alcove piece is dry-laid before the run is. Clear the full hall and stairs route of furniture, bikes, coats and stair-gates, and keep the front door propped and unobstructed for the carry. A street with houses in single occupation next to the same houses cut into flats produces two completely different jobs from the same elevation. The fitting day is arranged with whoever can actually give us access for the whole slot. One visit where permission only stretches to one.

A sloping floor is not the problem. The plane the unit tops finish in is. Level is checked at the template, which is the point of measuring in the room rather than off a drawing. Packing takes up small variation. It is not there to hide something that belongs in the units. A floor that falls across the depth of a run rather than along it tips the carcasses front to back, and packing the front feet changes the overhang while it fixes the level. The back edge is eased in progressively rather than offered up once and forced. Packers go under the carcass, never under the stone.

Two kitchens the same length can be far apart, because material, edge and cut-outs move independently of size. Material is quoted supply only and templating, fabrication and fitting sit on their own lines, so it is visible which part is stone and which is labour. Plumbing, gas and electrical work are not in the figure, because we do not do them. Once the carcasses are levelled the gap under the plinth varies along the run, and that varying gap is the honest record of what the floor is doing. It adds an hour or two to the day, and that time sits in the schedule rather than being taken out of the finishing. The overhang is checked again once the feet are set.

Bleach and limescale remover harm a polished finish rather than clean it, whichever material is on the units. Sealing is the one maintenance job that genuinely differs by material, and it is worth knowing which you are buying before the slab is chosen. Granite is porous to varying degrees, so it is sealed when we fit it and topped up over the life of the worktop. Cornice, picture rails and deep skirting survive in converted rooms, so the run stands off the wall and the back edge follows the units rather than the plaster. We measure the front door, the hall width and the turn into the kitchen before anything comes off the van, because a 3m piece has to swing through that corner on edge and stone does not bend to help you. Carried once, and carried properly.

A mitred join at a corner is a different job from a butt join along a run, and they are not priced the same. Join count and position are settled from the template drawing rather than improvised on the fitting day. A join is glued and clamped flush on the day, so it is fixed rather than something to be undone. If the island is a few hundred millimetres longer than the usable length of a slab, a second slab gets bought to gain that overhang, and the whole slab is paid for rather than the part used. A layout that has been packed and levelled run by run instead of to one datum shows as a step where two pieces meet. The return is offered up last.
