A finished join is typically two to three millimetres, colour-matched and sanded flush. Each join is an item on the drawing, so the layout and the figure move together. Machining is permanent. If a later kitchen moves the sink, the grooves stay where they were cut. The alternative stands on the surface, so the choice is losing worktop permanently or only while you are draining. Where there is no room for a separate drainer, grooves are usually what gets specified instead. The old scullery is a step down from the main room and the pantry beyond it is a step down again. The units stay and only the surface changes, so the job is a day, and what makes it a difficult day is the building. The units are relevelled before anything new is bedded.

Nothing is cut out in the kitchen. Cutting a bowl on site is how worktops get cracked. If the sink or hob changes after the template, the drawing changes first and nothing is cut meanwhile. A Belfast or butler sink has to be installed and at its final height before the template, because the stone is cut to sit on it. Seating overhangs past roughly 300mm will not carry on the carcass alone, so flat steel bar or a plywood substrate has to be built into the units first. The shape is already there to be measured, which makes the template straightforward and leaves the strip-out as the part that actually needs planning. The new pieces are nested, not traced off the old ones.

Damage found on the bench never leaves the workshop, and damage on the carry is remade under the same cover. Stone cannot be filled and made good the way laminate can, so a damaged piece is remade rather than patched. Floors and units are protected before anything comes through the door. A handrail that has to come off before a piece will pass is twenty minutes at the start of the day, and it goes back on the wall before we leave. With no room to turn, the old top gets cut up in the kitchen instead, which is dusty work and needs the room emptied first. It sets what the day actually looks like.
