The alternative to a join is a shorter run, which is usually the wrong thing to trade away. Even an easy kerbside carry wants the pavement clear at the tail lift, because a three-metre piece on edge has a swing radius nobody expects until it is swinging. Getting that wrong leaves a finished, machined piece that cannot reach the room, which is a remake rather than a trim. Polishing a piece that cannot reach the room wastes a day.

Two bowls means two cut-outs and a bridge of stone between them, which decides where the sink can go. The sink, tap and hob have to be physically in the room at the template, not merely ordered, because the cut-out is machined to the item itself. Nothing is cut out in the kitchen. The return piece is the awkward one on a slab: short, full depth, and rarely nesting neatly against the long lengths, so yield rather than area is what moves the material figure. A join that lands in the wrong place cannot be moved once the cut-outs are machined, so it is settled on the drawing. Cut-outs are machined with the piece bedded down.

A groove set needs a clear stretch of worktop beside the bowl, so it competes with the run for length instead of being free surface. Where there is no room for a separate drainer, grooves are usually what gets specified instead. Two runs and a return into a rear extension is the pattern, and the return is the piece that never nests neatly on a slab. All of that is settled at the nesting stage, because a machined piece cannot be adjusted afterwards. Cut to the room, not to a rectangle.

An upstand covers the gap where the worktop meets a wall that is not flat, which is its real job. Tiling and stone can meet, but where they meet is decided before the template rather than after. A full-height piece shows a wall that is out more than an upstand does, over the extra height. Original quarry-tiled floors sit lower than a later screed, so a run crossing that junction needs the units packed to one level. What does drive the bench work is the knocked-through kitchen-diner: the return worktop and any peninsula are seen end-on from the dining side, so we nest the pieces so the veining carries across the internal corner in the same direction rather than turning through ninety degrees. The bench proves it before the van moves.
