Rooms are tall with deep window reveals, and a run finishing into a reveal is templated to it rather than assumed square. The kitchen is usually a long galley in a rear extension or side return, so the run lengths are the first thing we check against slab length, anything beyond roughly three metres either needs a join or a second slab, and that decision alone moves the material figure more than a few extra square metres would. That is what the itemised lines are for. Old masonry walls bow and the chimney breast is never plumb, so template on the finished plaster and expect deep scribes on both ends of the run.

Several of the older houses are listed or in a conservation area, so scaffolding, hoisting and any external route need agreeing in advance. Front steps up to a raised entrance and a narrow original hallway mean a slab has to come in on edge and turn at the stair foot. Hoisting is planned at quote stage or not at all, because the crew, the equipment and the permissions are three separate bookings. An access-driven join is priced like any other join, and people are always surprised to see one on a dead straight run. It appears as its own line rather than buried in a rate.

A galley puts the sink on one side and the hob on the other, which spreads the cut-outs across two pieces instead of weakening one. It is the shape rather than the square metreage that moves the number, which is why two kitchens the same size quote differently. Shape first, area second. Material is £110-£550 per square metre supply only, and templating, fabrication and fitting are quoted on their own lines.

Alcove pieces get cut oversize on both scribe edges, with the true wall angles carried on the template drawing rather than assumed. This is the item most often left out of a cheaper quote, and it comes back as a variation once the templater has been. Better on the quote than in a variation. A street with houses in single occupation next to the same houses cut into flats produces two completely different jobs from the same elevation.
