All of that is settled at the nesting stage, because a machined piece cannot be adjusted afterwards. Cut-outs are set out from the units, not the appliance box.

Sealing is the one maintenance job that genuinely differs by material, and it is worth knowing which you are buying before the slab is chosen. Upkeep is settled when the slab is chosen, since it belongs to the material rather than the fabrication. Quartz carries resin, so a hot pan wants a trivet, while granite and sintered stone will take one without complaint. Floors are boards over joists with a solid floor only in the service rooms, and the two meet somewhere in the middle of the kitchen. Islands here regularly run longer than a slab, so the join is nested to sit over an internal gable and positioned so it does not run through the hob cut-out, and on a heavily veined stone we nest the island and the back run together so the movement relates across the room.
