The old tiling must be off and the wall made good and dry before templating, not on fitting day. An owner paying for this directly tends to want the reasoning as much as the number, so a quote that explains why a join sits where it does is worth more than a cheaper one that does not. A 100mm upstand is the low-maintenance answer, and full-height stone is the one that has to be committed to early. Two attendances need two people to be in.

The bowl position has to be settled before templating, since the grooves are set out from it. They are cut with a fall towards the bowl, which is why they cannot be added on site later. On a porous stone the grooved area is sealed with the rest, and it gets wet more than anything else. Where the side return has been filled in, one side of the new room is old brick and the other is new blockwork, and the two do not behave alike. What decides between a slim upstand and full-height stone is nearly always the wall rather than the taste. Sockets cut in the shop, not on site.

Where there is a lift, whether it can be booked out and padded matters as much as its size. A join forced by the route still sits over a gable, so it is no poorer a join for that. Splitting a run costs a join, and that is the price of getting stone into the room at all. On the fitting day floors and door frames are protected, joins clamped flush, sink and hob sealed. Socket positions, sill heights and wall flatness are the three things that settle this, and all three are properties of the building. Height off the units, not off the old tiles.

Ordered later from a different batch, the match is not reliable where the two pieces meet. A full-height piece behind the hob has to allow for the extractor, so that gets settled first. What decides between them is usually the wall: what it is built of, how flat it is, and where the sockets ended up. Ceilings run to about two point four metres, so wall units, a splashback and an extractor are all competing for the same short band of wall. That leaves a ragged band right where the upstand has to sit, which is fine for a 100mm upstand that covers it, but a full-height splashback needs the wall made good first or it will rock on the high spots. Panels expose a wall; upstands forgive one.
