Nine times out of ten the units are old and out of level here, so we scribe hard to the wall and expect to pack the run rather than trust the existing tops as a guide. A lot of these are rented or recently bought and the units are staying, we are cutting to fit existing carcasses rather than starting fresh.
The bay at the front and the back addition at the rear were built to different standards, and the kitchen is nearly always in the weaker of the two. The kitchen is usually a long galley in a rear extension or side return, so the run lengths are the first thing we check against slab length, anything beyond roughly three metres either needs a join or a second slab, and that decision alone moves the material figure more than a few extra square metres would. That is what the itemised lines are for.
The buildings themselves are mostly Victorian two-up two-down terrace, inter-war terrace and low-rise flat. They are not interchangeable, and a worktop finds the differences quickly.
