A Belfast or butler sink has to be installed and at its final height before the template, because the stone is cut to sit on it. A piece with a bowl and a hob cut into it is the fragile one, and it is handled accordingly. If the sink or hob changes after the template, the drawing changes first and nothing is cut meanwhile. Two runs of similar length nest as a pair off one slab, and if one of them grows by a few hundred millimetres the pair stops fitting and the yield changes for both. Old laminate has often been holding a run square for years, and taking it off shows what the units were really doing. The shape is measured again, not copied off the old top.

A seal is not waterproofing. It only buys time to wipe a spill up. Marble is the one people underestimate. It is porous, like granite, and wants sealing. Quartz carries resin, so a hot pan wants a trivet, while granite and sintered stone will take one without complaint. These kitchens are big rooms with long perimeter runs and an island, so level has to hold across the whole floor rather than along one wall. Any island overhang past about 300mm will not carry weight on the carcass alone, so flat steel bar or brackets have to be let into the units first, and that is agreed at template stage, not on fit day. The shell is the constant here; the surface is not.

Packing takes up small variation. It is not there to hide something that belongs in the units. Variation past what packing can take up has to be corrected in the carcasses before we cut, because the template records the units as they stand. Levelling belongs in the carcasses, on their own legs and packers. A chimney breast left in place splits a wall into two alcoves, and the two are rarely the same width and rarely parallel to each other. A laminate top was scribed thin at the back to swallow it, and stone cannot be shaved down the same way. The old carcasses are rarely level and never were.

The grooves sit inside the depth of the top with stone left either side, so a shallow run limits them. They read strongly across a dark stone and are nearly invisible on a pale one, so look before deciding. There is usually a cellar head or a hatch somewhere in the floor, and whatever sits above it has to stay liftable. The units stay and only the surface changes, so the job is a day, and what makes it a difficult day is the building. Whatever the old top hid comes to light.
