Chips at an edge or a corner are the usual form, because that is where stone is least supported. Most breakages happen on the carry, which is why the route is walked and measured before anything comes off the van. Floors and units are protected before anything comes through the door. There is no leaning a piece against a wall halfway up, so any flight longer than a dozen treads is planned around a rest point on a landing. Where a seam becomes unavoidable the choice of stone starts to matter, because a fine even speckle closes a joint almost invisibly and a broad vein simply will not. Short pieces nest tighter, and tighter nesting is less stone bought.
