A join added to get stone into the room is a different thing from a join added because the slab ran out, and the quote says which is which. Doorways, the newel post and the handrail usually take the room away, rather than the stairs themselves. An external stair, a side return or a rear garden counts as carry and is measured the same way. The side passage is the measurement that matters, because a piece has to be carried flat down it and then turned in at the back door, and the turn is always tighter than the passage. With no room to turn, the old top gets cut up in the kitchen instead, which is dusty work and needs the room emptied first. Both movements are planned as one.

Units have to be fixed down as well as levelled. A loose carcass moves under stone. Where a run meets an appliance, level decides whether that appliance door still clears the stone above it. Packing takes up small variation. It is not there to hide something that belongs in the units. A scribe has a working limit, and past twenty millimetres or so the back edge starts eating depth the run cannot spare. A laminate top was scribed thin at the back to swallow it, and stone cannot be shaved down the same way. Levels get corrected before the new top is measured.

The quote is written from the template drawing. Before that it works from what you have described. Cut-outs, edge profile and join count are itemised, so taking one out removes a line rather than starting an argument. What is quoted is what the drawing says, and the figure does not move unless the drawing does. Walls that bow along their length are the normal condition rather than the exception, and a straight-cut back edge will show a shadow gap at one end and touch at the other. It usually explains the odd filler piece or strip of beading in the existing run that nobody could account for. Same footprint, different tolerances.
