A hundred and forty years of alterations sit under the current kitchen, and the worktop is what has to sit flat on top of all of it. Old top out in the morning, new stone down and sealed the same afternoon, with a plumber either side of us. Sound carcasses are the one condition.

Mostly flats with compact fixed kitchens of 2.4-2.8m and appliances already in position, so replacement runs and upstands are the bread and butter. The Victorian terraces on the side streets give occasional rear-addition kitchens with a bit more length to work with. Appliance positions are effectively fixed here, so template around the existing hob and sink footprints rather than assuming they can be shifted along the run.

Where the side return has been filled in, the old external wall is now an internal one and still carries its render, its gutter line and its old fixings. In most Victorian terraces the kitchen sits in the back addition, so you get a narrow galley with one outside wall and nothing square to work off. Units kept, surface changed, one day.

A red route means no stopping, and no stopping means exactly that, so the stone comes in from a side street or from a bay behind the property.
