Kitchens tend to be large but irregular, often incorporating a utility and boot room in the same space, with a freestanding range and long timber-or-stone runs against thick walls.
A range or an Aga in an original recess is usually immovable, so the run is designed around it and the clearances come from the appliance. Long perimeter runs and an island mean level has to hold across the whole room, so the templater sets a single datum and works every run and the island off it rather than levelling each wall in isolation. Unrestricted kerbside is straightforward as long as the space in front of the property is actually clear when the van arrives. A templater circling for a space arrives late into a slot that was already tight, and the drawing is what suffers. The templater needs a proper stop, not a pause.

All runs and the island carcass fixed down and levelled to one datum, with the sink, tap and hob on site - an island cannot be templated while it is still loose or sitting on packers. Managed stock usually comes with its own rules about working hours, waste, and who is allowed on site. A template booked hopefully around another trade is the commonest cause of a wasted visit. No stone is cut from a plan.
