A piece travels on edge, never flat, because on edge is how stone of that length carries its own weight. Levelling belongs in the carcasses, on their own legs and packers. Variation past what packing can take up has to be corrected in the carcasses before we cut, because the template records the units as they stand. Where a run meets an appliance, level decides whether that appliance door still clears the stone above it. Where a breast interrupts a long wall the join can often go there, so it reads as a natural break rather than a line in the middle of a worktop. This is the commonest reason a replacement turns out to need more than a straight swap. It is the usual surprise, and it is a known one.
