Mansion flats on the estate hold their original service plan with the kitchen at the back off a corridor, and a lot of the work is replacing tired timber or laminate on existing units without touching the layout.
Many of the older houses are listed, which rules out taking out a window or a sash to bring stone through, and the front doors are period joinery that nobody will let you unhang. Listed frontages mean the stone comes through the existing door opening or not at all, so template to the doorway first and the kitchen second.
Listing and conservation conditions apply to a good number of these, which constrains what can be altered around the kitchen rather than what goes on top of the units. What the old top has been hiding is usually a floor that settled towards the back and units that were never fixed back to the wall. What is under the old top is the real question.

Have a plumber booked to disconnect the sink, tap and waste first thing and reconnect after we have gone, and clear the hallway and stairs completely so we can carry slabs through the house. The same building type can arrive as a careful one-off kitchen or as a fast turnaround, and the honest answer is that they are priced differently. A plumber disconnects before we arrive and reconnects after we leave, and that is worth booking early. Units kept, surface changed.
