What decides it is not the width of the stairwell but the length of piece that can be turned in it. A window sill or a radiator on the half-landing takes the corner out of the turn at precisely the point the piece needs that corner. We plan the strip-out and the carry as one movement so the kitchen is only out of use for a single day. That is agreed before a plumber is booked.

Stone up a wall is heavier than tile and bonded rather than hung, so the wall has to be sound. A full-height piece behind the hob has to allow for the extractor, so that gets settled first. An upstand covers the gap where the worktop meets a wall that is not flat, which is its real job. The rear door has a concrete step and a small canopy over it, and that step is the whole of the difference between the kitchen floor and the garden path. What comes out goes by the same route the new stone comes in by, which is why that route is walked before anything is lifted. Tiling bonded to the wall behind usually comes away with the old top, so that wall is agreed beforehand. Take the old tops off yourself if you would rather, and the quote simply carries one line fewer. Where parking runs down both sides the road is left as a single lane, and a van standing in it has to be somewhere it does not stop a bin lorry. Where unloading has to happen in one go, the load order is planned so nothing has to come off twice. A timed unload is planned into the rack before it leaves.

Remnants bought elsewhere are the awkward case, because the drawing is then made to fit the stone. The workmanship guarantee is the same either way.
