What happens if my units are not level?

An island is where this usually shows, standing free with no wall to level against. Level is checked at the template, which is the point of measuring in the room rather than off a drawing. The check comes before the measuring rather than after, because the whole drawing is set out from that plane. A downstand over a run caps wall unit height before it caps anything else, and the splashback then takes its height from the steel rather than from the units. This is the commonest reason a replacement turns out to need more than a straight swap. What passed for a fit in chipboard will not pass in stone.

Can I have stone up the wall in a Creekmouth kitchen?

A full-height piece shows a wall that is out more than an upstand does, over the extra height. Both are templated after the worktop is down and settled, because they are cut to the wall itself. A full-height piece behind the hob has to allow for the extractor, so that gets settled first.
