A dropped pan years later is a different question, and stone is remade rather than filled either way. Chips at an edge or a corner are the usual form, because that is where stone is least supported. A serving hatch through to the living room was common in these plans, and blocking one up leaves a panel of newer plaster part way along the run. These kitchens work hard, which argues for surfaces that ask for nothing: engineered stone for its consistency, sintered stone where heat and scratching are daily.
