A granite kitchen ends its day with a sealer, and a sealer wants a dry face and a quiet hour afterwards, so that hour is written into the day rather than borrowed from it. A honed face marks on grit, so nothing is set down bare.

Not particularly, and it would be easy to pretend otherwise. What the research on this patch actually lists is worktop replacement and worktop installation. That is a point about the buildings round here, not about the job. The quoting, the cutting and the fitting are identical here to anywhere else we work. Where several kitchens are ordered together the sensible move is to take them all off one batch, because two slabs of the same name bought six months apart will not sit happily in the same building. Peninsulas frequently land on a lightweight partition or on units that were never fixed down, and stone needs proper support under it before it goes on. Taped internal angles in plasterboard belly at the corner, so the run picks up a few millimetres over the last 300mm and a plan-angle mitre will not close. Speckle hides the resin line a mitre leaves behind. That changes which questions are worth asking about the stone, because somebody staying put wants to know how a honed face marks in five years and somebody selling wants to know how it photographs next spring. Where a partition has been built off the floor screed rather than off the slab, it moves, and a mitre bonded across that corner is the first thing to open. A run that sits under strong sun for hours every afternoon suits a surface built to be stable in daylight, because a resin-bound stone is made for indoor use and sustained sunlight is the one thing it was never designed around. Every notch is machined on the bench and none on site.

Upkeep is settled when the slab is chosen, since it belongs to the material rather than the fabrication. Quartz carries resin, so a hot pan wants a trivet, while granite and sintered stone will take one without complaint. Topping a seal up is a wipe-on job with a cloth. The front door of the building sits at the top of a step off a tiled path, so the carry starts outside the building rather than at the door of the flat. Rooms in these houses run long and narrow with the only honest daylight at the garden end, so a pale honed surface does more for the working half of the kitchen than any colour with depth in it. A compact kitchen puts the band ahead of the metreage.

The tap hole is drilled in the workshop too, and its position depends on how far the tap has to swing. A tap under a window board still needs room for its handle to lift, which is checked at the template. A Belfast or butler sink has to be installed and at its final height before the template, because the stone is cut to sit on it. Because a peninsula is seen from both sides, the underside of any overhang gets the same edge treatment as the top, which is easy to leave out of a spec. An island is the piece that decides whether one slab covers the kitchen or two, and a second slab arrives as a step in the figure rather than a gentle slope.
